There is some food here...
You’ve probably noticed that I have completely fallen off the cooking wagon… I’m either busy, or have other excuses… Which is really typical me. I don’t tend to last too long on anything. I loose my steam… For some reason I go through these stages, where I’m all into something, and then I can’t force myself to do the very thing that I really liked not so long ago. It is a very annoying habit. Lack of will power? Probably. Except I’m not sure what I can do about it.
And right now I’m on a “I don’t like cooking” phase. I don’t want to cook. I don’t know what to cook. I don’t like the smells, I don’t like the ingredients… I don’t want to stand in the kitchen… (In fact, all I want to do is lie down on a couch somewhere… )
But today I forced myself to do something. Zucchini pancakes, curried chicken and some rice. And yesterday there was simple spaghetti in marinara sauce. Nothing to be excessively proud of. Though the chicken came out pretty nice (Fry a chopped onion, add cubed chicken, and chopped veggies, like bell peppers, celery, carrots, then add curry powder (or other spices, I also added masala powder), salt, pepper, a tblspn tomato paste, a cup of water… simmer for 20 minutes, then add couple of tblspns of sour cream and simmer 5 minutes more.)
And it’s embarrassing. Cause I was supposed to have a cooking blog…
But instead it’s just lots of mindless ramblings… And I don’t really know how to get back on track. And I don’t know what to write. I really don’t.
I think I’m an emotional wreck right now, being totally optimistic about every thing one minute, and totally pessimistic the next. Somehow finding the middle ground is harder than usual…
And that sucks…

Thank goodness my wife does almost all of the cooking. I don't think she was too happy with my ramen noodle or hambuger helper.

I feel better knowing I'm not the only one that struggles with cooking. There are days I just don't feel like it either.

Blogging is tough work. Your blog is awseome. If you don't feel like blogging, it is your prerogative. Take it easy and take life as it comes -- one bite at a time.

Though I'd be interested in the recipe for the zuchini pancakes if you'd care to share the recipe. Zuchini bread is absolutely yummy; I'd love to try the pancakes.
Hope your feeling better soon, could it be baby hormones that are making you feel so up and down?

Lesley: Cooking is horrible... It's one of those things that you take for granted when you're a kid (that your parents will do it, that is), and then all of a sudden the reality of YOU BEING RESPONSIBLE FOR FEEDING PEOPLE hits, and it can be quite stressful, to say the least.
Alexys: (totally loughing out loud here... I love Hamlet -- I think I got my procrastination streak from him). And you're right - blogging can be hard sometimes, but it really makes up for itself on those up days :-)

Faith: Thanks :-) The pancakes are really simple: Take about 5 zucchinis, 2 potatoes, 1 onion. Peel and then shred them all (I use food processor shredder cause I'm lazy), beat in 2 eggs, add salt and pepper and about a cup of flour. Mix well. If it looks very watery, add some more flour (but a bit watery is ok... The more flour you add, the more bready/thick they become, and that's a matter of personal preference. If you like really thick and fluffy, add a bit of baking powder.). Then spoon flattened patties onto a preheated oiled frying pan. Very quick and simple :-) PS: I tend to like mine thin and crispy, so I don't add too much flour... PPS: I just realized I have a picture of them in the archives (September 21, 2006).
