Fried potatoes, as promised…

Somebody is taking this blog way too seriously. I mean it. The said somebody has bugged her husband all morning, so that he ended up taking her to a kitchen supplies store, where she bought four different (non-matching, and therefore completely non-practical) plates just to test the theory that plates are screwing up her pictures.

Fortunately she still had some sense of reality left, and therefore purchased the cheapest plates she could find. (So if it still doesn’t look right, she can blame the cheap plates…)

That very somebody also developed a cold, a headache, a sore throat, and lots of other complaints all at once. So now that someone thinks herself a real trooper for braving the kitchen tonight. (But she really had to show off the plates!)

And tonight we had…. Fried Potatoes! With Mushrooms! And Dill!!!

I think the black plate is the winner… Click to see the large view, if you don't believe me. Next tweaking project: the lighting. And maybe do some research about composition… And when all else fails, I’ll start blaming the camera.

I know, I know, you really want the recipe, so here it is:

Fry a large onion (finely chopped). Through in chopped mushrooms (I used 3 Portobello caps). Fry till mushrooms have a nice crust (and change colour). In a separate pot fry thinly sliced potatoes. Don’t mix too often. Really. Or they will break apart. I completely forgot about that… But the potatoes have somehow survived.

Obviously the frying is done in the healthy oil of your choosing. (Personally I hate olive oil… but that’s just me). Keep on frying and flipping till potatoes are done, look pretty, and some have a nice crust…

Then mix everything in one pot. Add insane amount of dill. (Ok, however much you like. I put about third of a bunch. Sometimes more. But I LOVE dill.) Chopped, obviously. Season (salt, pepper), mix, cover, and turn off the stove. Just wait for a bit for the flavours to blend… and you’re done.

Serve with sour cream. The importance of sour cream cannot be overstated. Ideally you mix it up with the potatoes once you’re ready to eat it all. (Ketchup? With fried potatoes? Are you kidding me? I mean, if you REALLY want to… But I’m pretty sure it would be atrocious… But that’s just me, of course.)

Place on a pretty plate of your choice and take a picture. Then place on another pretty plate, and take another picture. Continue until your cohabitants call the insanity hotline…

By the way… I never said the dish was health-conscious. (I mean no one died from it or anything…) But it sure tastes good. And homey…

And the real testament to the greatness of this dish: husband has officially proposed that it becomes our staple vegetarian-day dinner! He wants it at least once a week! And he wants yesterday’s pasta as a once a week thing too! Just five more dishes, and I’m set for life! (and this blog will become an exciting-automatic-repost-same-post-every-seven-days blog…)

I agree, the black plate looks better. I've always thought food looked better on dark plates. We have that cobalt blue Fiest ware and the food looks good on that, too. I think white is back in style now, though, but I think food looks insipid on it.

Your potatoes sound great; I love dill, too, but it's unusual to find a man who likes it. I've had 3 husbands so far and they all hated dill (it's not something that comes up in courtship), so I'd hang onto yours!

I found your blog via Amalah's comment section, and I was happy to find a fellow vegetarian to supply me with some recipes - the food looks great! (And I agree - the black plates photograph much better.)

I'm a reluctant cook; I always get very excited about the prospect of making a good meal, but I can never seem to pull it together long enough to find a recipe, make a list, go to the store... Maybe you'll inspire me out of my laziness!

rebecca: the black plate does have that something, eh? Now have to work on my other photo skills. And my husband never had dill before he married me, but now he's used to it cause I put it everywhere. Guess I'm lucky :-)

kelly: (Amalah's blog is awesome). I'm a struggling vegetarian with a whole family of carnivores :-) So I have to cook both ways. But twice a week we are all veggies :-) And I'm an incredibly reluctant cook... The main purpose of this blog is to force my butt in the kitchen, so I don't have to report all the time how we've ordered yet another pizza. (though if you check back entries, you'll realize that that does happen.... pretty often... :-) )

asha: I check your blog daily for inspiration :-) And these potatoes figure great as a meal, cause of the mushrooms in them (and mushrooms are very satisfying).

Russian fast food, cool. I've been meaning to write something about fried potatoes with mushrooms, which is one of my parents' favorite meals when they're short on time on ingredients.
